🍪 Low sugar high protein oatmeal chocolate chip cookies

Nothing beats the delicious smell of freshly baked cookies. These are the best cookies I’ve had in a while… And they are low sugar and high protein — what else can we ask for?

Recipe by Grace and Good Eats, but I modified it slightly based on several batches I made.

Ingredients

  • 2 cups old-fashioned oats (1 cup will be ground and used as flour, and 1 cup will be used as whole oats)
  • 30 grams protein powder (approx. 1/4 cup)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup Erythritol (sugar substitute)
  • 1/4 cup semi-sweet chocolate chips
  • 2 tsp of cinnamon (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Use a food processor or blender to finely grind 1 cup of the oats into a flour.
  3. Combine ground and the other cup of whole oats, protein powder, baking soda, salt and cinnamon in a small bowl. Set aside.
  4. In a large mixing bowl, cream together the softened butter and Erythritol.
  5. Add egg and vanilla to the mixing bowl, mix until combined.
  6. Slowly incorporate the dry ingredients into the mixing bowl.
  7. Stir in the chocolate chips by hand.
  8. Scoop cookies into balls onto a cookie sheet lined with parchment paper.
  9. Slightly pat the cookies down with your hand, as they don’t spread too much on their own.
  10. Bake for 8–10 minutes, until the bottoms are just lightly starting to brown.
